Ginger scallion sauce

This simple scallion sauce is delicious served over or as a dipping sauce with boiled chicken, vegetables and rice.

  • 1/4 cup canola or vegetable oil
  • 8 scallions, thinly sliced
  • 2 cloves garlic, finely minced
  • 1-1/2 Tbsp. grated ginger
  • 1/2 cup chicken or vegetable broth
  • 1 tsp. salt, more to taste.
  1. In a small saucepan, heat oil over medium heat.  Add scallions and cook for about 2 minutes. 
  2. Add garlic and ginger and stir in.  Reduce heat to medium low and cook scallion mixture until scallions are very soft but don't let them brown, another 5 minutes or so.
  3. Add broth and salt, stir together.  Taste and add more salt if you like.
