Purple scallions

It's springtime and purple scallions, spring onions, ramps and other spring veggies are making their way into farmers markets. I bought several bunches of purple scallions last weekend at the farmers market in my neighborhood and tossed them with a little olive oil, salt and pepper and simply grilled them up on our indoor countertop grill. They are really sweet and fragrant!

Just a note - the purple layer seems to be just the outermost layer, so when trimming and cleaning these up, some of them lost their purple layer but they are still delicious! Serve them alongside almost anything - I served them as part of a big spread with a roasted fresh ham (basically a pork roast) and some other grilled vegetables including white asparagus and zucchini, and also served them with a simple Italian salsa verde with chopped parsley, chives, capers, lemon zest and good olive oil - click here for the recipe.
